Its scientific panel on additives, flavourings, processing aids and materials in contact with food approved the thrombin/fibrinogen preparation, which is obtained from blood plasma.
The thrombin transforms fibrinogen to fibrin that interacts with collagen, binding re-constituted meat pieces. The panel noted that as thrombin and fibrinogen is from edible parts of animals, (and should be collected hygienically), no toxicological tests are required, adding the preparation was “not likely to increase the risk of allergic or intolerance response.”
