The water ice mix is initially slush frozen in a continuous freezer, which gives a smooth structure and prevents the docoration nib sugar from precipitating in the moulds, the company said. The nib sugar particles are coated in fresh and heat shocked water ice to obtain a ‘crunchy’ effect.
