World food standards body Codex Alimentarius is developing new global manufacturing standards on jams, jellies and marmalades and canned vegetables.

The details are being finalised for approval by Codex’s commission in June and July 2009.
These two draft standards were recently discussed by Codex’s committee on processed fruits and vegetables, which approved the term ‘fruit spread’ to designate jellies and jams; and agreed fruit content rules: for instance 11%-15% for ginger jam, 32% for strawberry and 23% for pineapple jams.
