A natural fraction of orange waterphase (orange aroma), EVK ex Orange includes the naturally occurring Ethyl Vinyl Ketone (also known as 1-penten-3-one). This chemical is present in natural orange alcohol as found in fresh orange juice. The EVK concentration is in the region of 1000ppm – making it a powerful natural source of EVK.
EVK has been widely found in nature. These natural occurrences will encourage some fresh thinking from flavourists. Treatt believes EVK has been reported in fresh tomato and tomato paste, pacific oysters, grape, guava and kiwi fruit volatiles, butter, cooked chicken, peas, cooked potato chips and black tea infusions.
