Manchester-based National Starch has announced the launch of Novation 9330 and Novation 9360 – the first completely organic, functional native starches.

Refined from tapioca, the starches are suitable for use in highly processed applications including dairy, baby food, fruit preparations, soups, sauces and emulsified dressings.
They comply with Council Regulation 2092/91 and are therefore compatible with ‘organic’ labelling.
Novation 9330 and Novation 9360 both develop smooth, short-textured pastes and set to a soft gel with organoleptic characteristics. Novation 9330 is particularly designed for high temperature/high shear conditions, while Novation 9360 is easier to cook and suitable for milder processing conditions.
Evaluation of Novation 9330 and 9360 is recommended in each specific application since factors such as heating rate, solids content, shear/stress conditions, pH and the presence of other ingredients such as sugar and fats will affect gelatinisation behaviour and hence rheological and textural properties.
