Self-confessed foodie Randy Blaun, a New Yorker who has consulted for the Atkins Diet, has come up with a fried dish that has six to eight grams of carbohydrates a serving, compared with 20-plus in a serving of regular chips.


Aside from cauliflower, her chips also contain egg whites, milk-derived calcium caseinate and a small amount of potato. She claims the chips have as many nutrients and as much fibre as a serving of broccoli.


A patent is pending for the low-carb cauliflower chips.
