Danish ingredients giant Danisco has launched Elevations 800, a new sugar alternative which it says enables dairies to produce creamy ice cream and and which can enable the production of indulgent frozen desserts for diabetics

“Elevations 800 provides a niche that is not currently out there,” insisted Cathy Miller, technical applications director – ingredients. “Most of the no-sugar-added products currently on the market are either no-fat or low-fat. This is a great tasting, indulgent product without the added sugar that many people need to avoid.”
Elevations has been developed to combine with Danisco’s specialty carbohydrate Litesse and its stabiliser/emulsifier system designed for high-fat applications and helping to guard against heat shock.
Litesse provides a clean flavour profile, and provides just 1 kcal per gram versus 4 kcal per gram when sugar is used. “Litesse is now considered 90% dietary fibre, so depending on the amount used, a fibre claim may be made,” said Miller.
Elevations 800 features natural and artificial vanilla flavouring, serving as both a masking agent of artificial sweeteners and providing a sweet creamy note to the product.
