Pantacchini’s Gourmet Foods has launched its latest dish to surprising success in Queensland’s restaurants, where despite its dubious contents is proving extremely popular amongst culinary buffs.

Green ants, harvested from citrus trees in North Queensland, apparently give smoked salmon a crunchy, lime-like flavour when flattened and encrusted on the fish. They are cooked according to health regulation standards and green-ant cured salmon is proving a popular dish.
