Danish food ingredients company Danisco has said it has developed two new pectin products that are designed to provide a rich, creamy texture to low pH dairy drinks.

Danisco said the new Grindsted Pectin AMD 382 and AMD 383 provide an “unparalleled texture profile, process and formulation tolerance and protein protection to short shelf life drinking yoghurts, long life drinking yoghurts, milk/juice drinks and soy beverages”.


In order to develop the pectins, Danisco’s R&D scientists employed sensory profiling in conjunction with traditional texture analysis. The pectins are designed to “provide creaminess without over coating, viscosity without sliminess, structure without heaviness, and a refreshing taste without an acidic bite”.
