For the first time in a decade France’s charcuterie (cold meat) sector has posted a trade deficit for 2004 totalling €16m (US$19.4m).

This is largely attributed significant import volumes from Italy and Germany.


French household consumption registered its first decline since 2000 falling by 1.2%. Sales of fresh sliced meats were down by 6.4% whereas pre-packed products now account for 61% of total production, trade association FICT reports.


On this latter trend, FICT adds that supermarket chains are losing out little by little to their hard discount  counterparts who now market around one-quarter of dry sausage and frankfurters  – two of France’s main charcuterie favourites. Retailers own brands are also increasing their market share.


While turnover in France’s charcuterie sector rose by 5% last year to €6.8bn, this can be put down to rising prices for pork.
