Enterprising students of a marine college in Fukui, Japan, have invented a jellyfish tofu after their city was besieged by the giant marine animals two years running.

Students from the Obama Fisheries High School set about creating the new dish when fishermen complained about one metre wide, 100kg jellyfish invading their nets.

Several health food companies now say they want to commercialise the new product. Jellyfish collagen is reportedly good for the skin. Fishermen had first tried to market the giant jellyfish in Japan but, unlike China where the food is popular, Japan eats little in the way of the delicacy.
