Using diced sweetened dried cranberries (SDCs) as the primary ingredient to add colour, flavour and to enhance nutritional profile, the crispbake is an innovative idea in the competitive snack and baked goods sector.


“We chose cranberries as an alternative to raisins because of their excellent processing and infusion properties: they maintain good fruit identity and structure throughout the cooking process, resulting in a crispbake with a delicious taste and excellent appearance,” explains Van der Meulen’s marketing manager, Jolanda Marring.  “Since the crispbake’s launch onto the Dutch and UK markets a few months ago, sales have been going exceptionally well.  The combination of a chewy cranberry in a crunchy toast works well. Consumers comment on the special tart-yet-sweet taste of the North American cranberry and are aware of its associated health benefits.”


The Sweetened Dried Cranberry (SDC) – a sugar-infused, dehydrated cranberry with a characteristic rich, red colour – is in the vanguard of ingredients sales. SDCs retain their shape well through a variety of processing techniques and have been used in products from cereals and snacks to confectionery and baked goods.
 
While SDCs are supplied whole, diced, and with varying moisture levels, Ocean Spray cranberry fruits are also available year-round in frozen, powdered and concentrated forms. With extensive knowledge and experience in new product development, Ocean Spray ITG is a pioneer in the field of fruit ingredients.
