Dutch health ingredients company DSM has developed a cold water soluble (CWS) version of its CaroPure® beta-carotene.

Beta-carotene is associated with a range of health benefits. An effective anti-oxidant, it protects cells from free radical damage, which is the cause of many degenerative diseases. Beta-carotene’s controlled conversion to vitamin A also makes it an ideal source of this nutrient in the human body.

In a wide range of foodstuffs, beta-carotene is an effective colorant and can be used as a clean label functional ingredient (antioxidant and vitamin A). Containing beta-carotene at a usual concentration of 1%, CaroPure® CWS can be used to create colours from yellow to orange, depending on the amount used.

DSM claims that this new CWS formulation, non-GM and preservative-free, will bring improved resistance against pH, heat and UK and stability against oxidation. It can also be incorporated into existing food formulations without adapting processes or equipment, as it is dispersible in cold water and soluble in warm.
