The New Zealand-based group said Jackson will chair its audit, finance and risk committee.
Fonterra chairman Henry van der Heyden said Jackson is “uniquely qualified” for the role due to his experience at Ernst & Young and his international experience in the UK, the US, Asia and South America.
Jackson replaces Graeme Hawkins, who is retiring from the Fonterra board after six years.
