UK independent cheese and milk processor Wyke Farms is rolling out Ivy Clothier’s Special Reserve, a new premium farmhouse cheddar.
The new cheddar goes through a maturation period of 15 months and is named after the grandmother of managing director Richard Clothier, the company said.

“This vintage cheddar is everything a good cheddar should be and has been nurtured for just the right time to produce a complexity of flavours that tantalise the taste buds with a sharp tang followed by a lasting mellow smoothness. This is a premium cheddar worthy of Ivy’s name,” Clothier said.
In May, Wyke announced plans to sell its cheddar in the US after signing a deal with a local distributor.
The company is planning to launch a range of products in the US, including its butter, vintage and mature cheddars and Leskol half-fat cheddar.
Wyke has a growing export business and the company sells into markets including north Africa, the Middle East, Australia and across Europe.
