Flavourings group Givaudan has added a range of natural ingredients to its TasteEssentials line of ingredients for cheese.
 
“Consumers are seeking variety and authentic eating experiences,” said Minerva Calatayud, Givaudan’s global product manager.

“These ingredients, for the first time, enable manufacturers to provide consumers with specific varietal cheese characteristics such as Emmental or Camembert, in a variety of products like sauces, dressings, process cheese, seasonings, and snacks.”


Calatayud said all the ingredients could be termed “natural”, apart from in Japan, and only contained dairy components.
 
Givaudan said it had made significant investment to enhance its capabilities in cheese flavours, through the acquisitions of International Bio Flavors, FIS, and Quest.
