Natural foods company Nikken has developed a flavour enhancer for gluten-free food products.


It has added a new wheat-free non-GMO natural flavour enhancer (7203) to meet the requirements for use in gluten-free processed foods.


The product consists of a blend of naturally fermented soy sauce, salt and yeast extract, spray dried on a maltodextrin carrier. This gives the soluble mixture a light tan colour and very mild taste, similar to a beef stock.


Nikken Foods Company general manager in North America Herb Bench said: “With more than 2000 food products marketed as gluten-free, we see a strong need for our new natural flavour enhancer (7203). It is an extremely effective natural replacement for HVP or MSG particularly effective in soups, gravies and sauces.”


According to SPINS, a San Francisco market-research firm that focuses on the health-food industry, sales of gluten-free products at conventional supermarkets have been rising sharply. Supermarket sales of gluten-free products jumped 19% for the 52-week period ending in June, while sales at natural-foods stores grew by 9.1%.
