The higher the intake of carbohydrates the higher the chances of developing cataracts, says a recent study by the Agricultural Research Service of the United States.


The potentially harmful effect of high-carbohydrate diets on the lens could be caused by increased exposure of normal lens proteins to glucose, the sugar feeding the body’s cells. The study, performed on women aged 53-73, found those whose average carbohydrate intake was 200 to 268 grammes/day were 2.5 times more likely to get cortical cataracts than women whose intake was 101 to 185 grammes/day. The recommended dietary allowance for daily carbohydrate intake for adults and children is 130 grammes.
