Florida’s department of agriculture will help local growers market a new low-carb potato, which will be in stores early next year.


Originally developed for better taste and shelf life, the new spud is nearly one-third lower in carbohydrates than regular Russets, and retains potassium, vitamin C and fibre after cooking.


Six producers will grow the naturally cross-pollinated potato, and the department of agriculture will coordinate a marketing and consumer awareness campaign beginning in early 2005. With so many consumers reducing or eliminating potatoes in their diets, the new potato is a boon for Florida’s industry, whose acreage has declined, yet continues to generate US$120m in yearly revenue.
