According to the United States’ Agriculture Research Service, the dual x-ray absorptiometrey, or DXA, uses x-rays of differing energy levels to scan for soft tissue of varying densities. The procedure is non-invasive and fast. Alva Mitchell, the scientist behind the ARS research said the DXA scanned carcass sections at a speed of 7.68 centimetres per second.


It will allow meat traders to know the true value of carcasses, especially considering the growing number of consumers interested in lean meat.
