A research team at Kansas State University is attempting to cultivate a variety of genetically modified wheat with higher levels of antioxidants, which it is believed play a role in combating heart disease.

Whole grain wheat contains antioxidants, which help the body fight the impact of harmful free radicals. Varieties that are naturally high in antioxidants have been identified by the scientists at Kansas, and they now hope to produce GM varieties with even higher levels.


Free radicals have been linked to a variety of diseases and also skin ageing, but high antioxidants combat their effect. Antioxidants are also believed to be useful in combating heart disease and diabetes.


Dolores Takemoto, who led the study, commented: “Several high antioxidant wheat strains are already available for growing. These could be grown now and they do survive baking well.”
