US pork processor Smithfield Foods has developed a new, higher-fat pork aimed at the low-carb diet market.

The product, which is from a breed of hog developed to provide more flavourful fresh pork, is being test-marketed at some supermarkets in Texas and Maine, reported Dow Jones News.

“This is more of pork the way it used to be – tastier with a little bit of fat on it,” James D. Schloss, Smithfield’s vice president of marketing, was quoted as saying.

However, Cynthia Sass, spokesperson for the American Dietetic Association, warned low-carb dieters that fat has more calories per gram than carbohydrates have.
