Sunbutter was developed by the Agricultural Research Service (ARS) and Red River Commodities, Inc., a major sunflower seed producer based in Fargo, North Dakota. The new product is being launched at the Institute of Food Technologists 2002 annual meeting in Anaheim, California.
Some three million people in the US are allergic to peanuts and/or tree nuts, with some suffering reactions that can be life-threatening. Many schools now ban peanut butter in their canteens in a bid to protect children with allergies from accidental exposure.
Sunflower seeds are a popular peanut alternative, but no company has successfully marketed a sunflower seed butter spread. ARS (the chief scientific research agency of the US Department of Agriculture) and Red River Commodities went into partnership last year to develop a tasty sunflower seed spread, and the services of a sensory panel were enlisted in May.
