An innovative freezing technique is being used for the first time to freeze tuna and bring it to market in Tokyo.


CAS Freezing chilled systems installed in some of the Japanese tuna fleet were used to freeze tuna catches using a method which its creators Abi Co., Ltd., claims prevents cell wall damage in foods during freezing, thereby avoiding the loss of flavour, texture and aroma usually associated with frozen food. The company says its frozen tuna sells for three times the market rate.


CAS, said Abi, has also been successful in freezing previously difficult to freeze produce such as sea urchin.
