In the last 30 years the worldwide dairy industry has gone from supplying commodities such as milk and butter to lifestyle products with a high added value factor such as probiotic yoghurt drinks. And the market is still changing, although it is not all good news. In the UK, smaller dairy companies and dairy farmers are finding it increasingly difficult to compete with the major European players such as Müller, Danone and Arla. In the US, as in the UK, dairy farmers are struggling to get a viable price for their product at a time when dairy products as a whole are coming under close scrutiny from the diet police.
