Arla Foods, Cr Hansen, Danisco and Novozymes want the Danish government to find €670,000 (US$874,760) to support the project. A steering committee linking the companies wants genetic and protein research to be undertaken to generate a better understanding of how food molecules affect humans.


Armed with such knowledge, new manufacturing processes and products could be developed improving food flavours and adding fresh tastes, said the steering committee.
