The New Zealand Institute of Food Science and Technology (NZIFST) has announced the launch of a new online educational and reference resource, an introduction to the principles of food process engineering, available free to students and working food technologists worldwide.


Unit Operations in Food Processing by R. L. Earle has been distributed and used as a food technology text book all over the world, and has been translated into five languages.


It is now available as a free, fully searchable set of web pages, indexed and interlinked so that specific information, examples, and figures can be found easily. Material can be printed off a page at a time, or by the chapter. More detailed illustrations are published in the new FlashPaper document format which offers enlargement and printing options.
 
In a rare act of philanthropy, this web edition has been made available by the author Dick Earle and his wife Mary, with the support of the New Zealand Institute of Food Science & Technology (NZIFST), as a service to education in food technology, and to the wider food industry. It is freely available for consultation and copying, and for any not-for-profit use
