Porter Finest Foods chose the IFE to launch its new range of ambient packaging for its Saupiquet Tuna product this week. The company has developed a flat pack bag for its foodservice tuna; environmentally (and dolphin) friendly, lighter, easy to store, easy to open without scissors and resealable, the bag is similar to that created by Heinz, but the focus here is on supplying the foodservice sector rather than the consumer – For now, at least.


From Porters, Michael Patton told just-food.com that the advantages of flat packaging are manifold, but particularly the ambient bag has an impact on the product quality. He explained that tuna is sterilised in its packaging, and because the sterilising process takes longer to penetrate cans, the tuna is almost cooked inside, which explains why tuna is often brown in colour.


With the invention of these new pouches however, the sterilisation process is completed far quicker, and the tuna is not inadvertently affected. It also has a stronger flavour, and a package does not contain the 25% water common in the tinned equivalent.


Saupiquet tuna is currently available in brine or oil for the foodservice sector, but Patton admitted that the company is considering developing a similarly packaged product for the retail sector in the future.
