Global starch supplier National Starch has extended its range of cold water swelling starches with two new products for application in instant foods. Ultra-Tex 2000 and Ultra-Sperse 2000 – based on waxy maize – provide all the premium functionality of cook-up starches with the convenience of an instant starch and improve economics, too. These starches each offer outstanding stability and are of particular interest for catering foods.

Designed for use in instant food preparations where high viscosity and a smooth, heavy texture are desired, Ultra-Tex 2000 and Ultra-Sperse 2000 both yield a smooth, short texture with a clean profile to a variety of prepared foods. Rich and creamy mouthfeel plus desirable clarity and sheen are also achieved.

Costs can be cut too: the starches have rapid and exceptional thickening power – so usage levels can be reduced. In some cases, other functional ingredients are not needed, reducing overall ingredients costs and simplifying recipes.

Trials have shown that use of these starches in frozen pot pies and chilled or frozen products results in superior freeze/thaw storage stability whilst providing excellent suspension of particulates.

The two starches can be used in similar mild shear/moderate pH applications but Ultra-Sperse 2000 should be selected in cases where rapid dispersion in hot or cold water is required as it does not form lumps. In addition, Ultra-Sperse 2000 can be sprinkled or pre-mixed with other dry ingredients.

Recommended applications for these new starches include dry mixes, sauces, gravies, instant cream-style soups, savoury glazes and turnover fillings. They are ideal for premium convenience foods, including microwaveable products, prepared under mild to moderate processing conditions. They will remain stable for many hours in food systems held on steam tables – making them ideally suited for the food service industry.
