Wendy’s subsidiary Baja Fresh Mexican Grill has introduced savoury pork carnitas to its restaurant menu.


Carnitas, a traditional Mexican favourite, consist of pork, seasoned and slow-cooked until tender and juicy, and spices. The Baja Fresh version takes those same traditional cuts, then marinates them in a zesty blend of chipotle, pasilla and New Mexican chiles with garlic and onions. The meat cooks slowly for more than five hours to a tender finish, with a little kick, the company said.


According to the National Pork Producers Council, pork is the world’s most widely eaten meat and plays a vital part in a healthy diet, Baja Fresh said. Pork is a good source of protein, iron, zinc and B-vitamins, which helps build red blood cells and metabolize carbohydrates and fats.


The US Department of Agriculture says that pork today compares favourably for calories, cholesterol and fat, with many other meats and poultry. Most cuts of pork are as lean or leaner than chicken.


“We are delighted to bring our version of savoury pork Carnitas to Baja Fresh customers nationwide,” said John Butcher, Baja Fresh senior vice president of marketing. “Baja Fresh is known for serving distinctly flavoured fresh Mexican food, and this new product will certainly meet the expectations of our customers.”
