A flavor enhancer which is low in monosodium glutamate, which is substantially free of 5′-IMP and 5′-GMP and which enhances both meat, vegetable and diary flavors. The use of the flavor enhancer in flavoring compositions and food and feed applications.

A soy protein hydrolysate flavor enhancer which is substantially free of 5′-IMP and 5′-GMP and comprises
less than 4% (w/w dry matter) of monosodium glutamate,
an amino acid level of from about 20% to about 55% (w/w dry matter),
carbohydrate in an amount of from about 5% to about 10% (w/w dry matter),
protein in an amount of from about 45% to about 55% (w/w dry matter),
and ash in an amount of from about 10% to about 30% (w/w dry matter).
