Wisconsin, a state that has long produced more cheese than any other in the US, is fighting to retain its leadership in the cheese market, according to a new report.


California is quickly nearing a level of cheese production to top Wisconsin’s. In the early 1990’s, California overtook Wisconsin as the nation’s biggest milk producer, a development that has caused Wisconsin state officials to focus on the cheese situation with severity, investing US$150m in the expansion and addition of cheese production facilities.


According to The US Cheese Market, a new report from Packaged Facts, the US cheese market produced over 3.7 million tons in 2000 and generated over US$11bn in industry sales in 2001. The industry is also enjoying a period of considerable growth, with sales projected to exceed US$14bn in 2006 and 85% of the growth in dairy demand over the past ten years due to increased cheese sales.


Don Montuori, acquisition editor for Packaged Facts, said: “Cheese is a hot commodity in the US. We have traditionally seen high levels of cheese consumption in this country, and now, for various reasons, the market is going through an especially intense period of growth that we don’t see tapering off for quite some time.”
