European Commission financed research into a little used grain called spelt has concluded that it could be widely used as a rich protein source for the health food sector.
Spelt could be used in the bread making, cereal, pasta, beer and breakfast cereal markets.
Researchers also suggest that used in animal feed, it could help bypass the need to feed meat to livestock.
