The meat fromYezo-sika deer has long been enjoyed as a local delicacy, but research has indicated that raising deer specifically for their meet could be profitable, especially as the population of that breed of deer is already growing, reports the Yomiuri Shimbun. Yezo-sika was once close to extinction, but now between about 130,000 and 200,000 deer are estimated to inhabit eastern Hokkaido alone.
In hamburger format, it is hoped that the meat will prove popular with tourists. It is less fatty than beef and has fewer calories, and participants in a taste test at a recent food show responded positively to the product. Three types of burger will be marketed: teriyaki burger, cheeseburger and a spicy burger.
