The British-based National Starch & Chemical Company has developed a new variety of rice starch called NOVATION® 8600 that performs well in frozen food products.
While it resembles other highly stabilised modified starches, this product has been developed to enable manufacturers to avoid gelling or syneresis when their products are reconstituted from frozen. It is designed for use in various types of food products that are processed at neutral pH but under moderate heat and shear conditions.
The product, which is available as a fine cream powder, also gives foods an intense taste that consumers prefer, according to a taste-test survey conducted by an independent research firm.
