US-based flavour manufacturer David Michael & Co has announced that it has entered into a strategic alliance with Balchem Encapsulates to manufacture and market microencapsulated flavours throughout North America.


Balchem will microencapsulate a broad range of flavours for David
Michael, for use within a number of food and beverage categories such as bakery, dairy, tea, coffee, dry mixes, confections, meats and nutraceuticals.


The companies said the microencapsulation would increase the flavour load by as much as 100% while the proprietary coating process would provide for a longer shelf life, typically 18 to 24 months, improved stability under heat, high moisture, and oxidation.
